Received my knife today and tried it out by slicing some rare cooked leg of lamb. Out of the box the knife was well made at an 8 on a scale of 10. The bevel grind was rough and the wood transition to the metal tang was not 100% smooth but usable. Probably have to run a belt sander on it to smooth it out.

While slicing the leg of lamb I could feel some resistance although the cut was fine for all intents and purpose. However, I think I will use my 4000 and 8000 grit Japanese stones to smooth out the bevel. For $26 and change the knife is fine for a Chinese made knife, When compared to my Shun Blue steel kiritsuke it’s night and day. The Shun is a 12 on a scale of 10 for quality fit and finish but it’s also $250 vs $26.

I plan to use this knife as my everyday kitchen knife because the belly is round but not too round to use as a vegetable knife while it can also be used as a chef knife for slicing and food prep. Also if it’s dropped and the tip breaks I can regrind a new tip without fear of destroying a $200 plus knife.

Once I regrind the bevel, I plan to use it to make some sushi to see it it will cut tuna or Spanish mackerel smoothly.

I will also get a messermeister knife protector so it can go into my knife drawer with out damage.

It’s actually fairly large and the blade spine is hefty enough to break chicken bone if necessary.

So in conclusion, for the price it is a very usable chef knife with the ability to cut vegetables like a nakiri knife.

Overall a good buy for the price. It’s a knife you can lend to your clumsy friends and not worry about them damaging it.

I'm a professional sushi chef, I bought this knife because of cheap price.In japanese word we called that Kiritsuke knives which one of the few multipurpose traditional Japanese blades, and can be used as a yanagi (fish slicer) or an usuba (vegetable knife). So, this knife can be use almost all I need for work.love it!

Bought this for my son and his wife as Christmas gift for 2017. Knife is excellent quality and comes razor sharp! I did a quick test on my arm hair (how I test every new knife) and it shaved off a section with ease. Of course, I cleaned it before it was gifted, but I had to know how sharp it was!

This is one great knife, it's razor sharp and it's perfectly balanced in one's hand. I've cut some beef steaks with it and it just slices through like butter, it's a really good knife especially for the price, why would anyone pair hundreds of their hard earned money for a knife when this one is perfect for an ordinary persons needs. This Knife Rocks!

Of the dozens of knives in my kitchen, this one is second only to a Wusthof Classic Icon hollow ground 8" chef knife. But that knife cost me over a hundred bucks more! Blade is embossed or etched to appear as a Damascus blade, which looks kinda cheesy. But it's a quality piece of stainless. Perfect profile with a nice rocking curve. A great knife with good heft, nicely balanced. Comfortable handle. I might buy a back-up. Comes in a nice gift box, and has a rugged plastic sheath for the very sharp blade. Excellent value.

I purchased this as an extra Christmas present for my husband. It wasn't anything we were looking for. When he opened it up he was amazed. He has to show everyone that comes to our house. He uses it almost everyday. We are looking forward to buying more. I still cannot believe how much he loves it - he is very particular with his knives. My last chef's knife chipped and I was left with no workable knife for cooking. I search Amazon, since Sur La Table and other similar stores had very high prices. After searching I found this knife and ordered it. Gorgeous. the blade is stunning, the handle is too. It came with a blade guard and a in a box (perfect for a gift but I'm not giving this one away)! On the 4th of July I was tasked with making potato salad for 21 people. When I started cutting the russet potatoes I had to check that they hadn't gone soft or were rotted..The knife just slid through these big potatoes. Sharpest knife I have ever used. My favorite Amazon purchase his year.

A great value. This knife is incredibly sharp, feels good in the hands, and handles wonderfully. While it isn't a true layered knife (the pattern is etched on), it seems to be a good quality steel and holds it's edge well. In fact when using it to scoop up chopped vegetables I had to be careful as the knife kept trying to shave a thin layer off of my wood chopping board. I have several Japanese knives made in the traditional manner costing several hundreds of dollars and this knife performs as well as they do. I am ordering a couple more to give a Christmas presents.
